Apparently, the Chinese New Year 🧧 Celebrations last for some time!!
So, this week I decided to attempt a tiger sourdough using turmeric and gel food coloring. I also used my new #ankarsrum and to my big surprise, it was able to handle a 75% hydration sourdough challenge! In 10 min I was able to reach windowpane and the dough was beautiful and elastic! I only did 2 S&F because the dough was already super strong!
So, here it is my tiger 75% hydration, 20% barley, 80% AP, 20% starter and 2% salt sourdough!
